Chicken, mutton and achari karahi tossed to order in a cast-iron wok over an open burner — tomato, ginger and green chilli reducing down while the meat sears, not stews.

BBQ & kebabs

Marinated, then flamed

Chicken tikka, seekh kabab, mutton chops and boti go from a spiced overnight marinade straight onto the coals — charred at the edge, still juicy in the middle.

Biryani & rice

Layered low and slow

Chicken, mutton, fish and beef biryani, dum-cooked in layers, alongside Afghani pulao and the Thursday daal chawal regulars ask for by name.

Apna Kolachi Restaurant LLC serves traditional Pakistani and Indian home cooking — nihari and halwa puri at breakfast, karahi and BBQ through the day and night, and a full roll corner from 2pm to 2am.

Everything is cooked to order in full view of the counter: karahi tossed in the pan, tikka and seekh kabab over the coals, tandoori roti straight off the wall of the clay oven.
